Rodriguez, Profesor of Chemistry and Dean of the School of Arts and Sciences, published an article in "Biomedicine" (Biomedicine: 2021; 41(1): 3-8).

The article, Chemical Properties of Polyphenols, reviewed the structural aspects and chemical characteristics in polyphenols related to biological functionality and medical applications. More specifically, the review focused on anti-inflammatory, anti-oxidant and anti-viral properties of well-known polyphenols found in plants.  The assessment of polyphenol structural characteristics to explain differences in their biological and biochemical activity is fundamental to understanding their contribution to human health.”
