In conjunction with Texas Wesleyan alum Dr. Juan Carlos Carmona-Hernandez Ph.D (95’), and colleagues from the Grupo de Investigación Médica, Universidad de Manizales, Manizales, Colombia, Grupo de Investigación Nutrición, Metabolismo y Seguridad Alimentaria, Universidad de Caldas, Manizales, Colombia and Grupo de Investigación en Cromatografía y Técnicas Afines, Universidad de Caldas, Manizales, Colombia, Dr. Ricardo E. Rodriguez, Profesor of Chemistry and Dean of the School of Arts and Sciences, published an article in "Biomedicine" (Biomedicine: 2021; 41(1): 3-8).
The article, Chemical Properties of Polyphenols, reviewed the structural aspects and chemical characteristics in polyphenols related to biological functionality and medical applications. More specifically, the review focused on anti-inflammatory, anti-oxidant and anti-viral properties of well-known polyphenols found in plants. The assessment of polyphenol structural characteristics to explain differences in their biological and biochemical activity is fundamental to understanding their contribution to human health.”
